Inspired by summer’s sweet berries, Chef Christina Machamer is sharing her Strawberry and Bacon Salad – perfect for a light lunch or side dish at the dinner table on a warm summer day. The varying textures and contrasting flavors of strawberries, feta, greens, and bacon creates the perfect balance of sweet and slightly salty. Ingredients
4 Cups | Mixed organic greens |
1 Pint | Strawberries |
4-6, each | Slices crispy bacon, chopped |
1/3 Cup | Crumbled feta, goat, or blue cheese |
2 Tablespoons | Extra virgin olive oil |
2 Teaspoons | Aged balsamic |
To Taste | Salt and fresh ground black pepper |

Method
- Remove strawberry tops, and slice into bite-sized pieces.
- Add greens to a large mixing bowl. Season with salt and pepper, then toss with olive oil to coat the leaves. Add Balsamic, cheese, strawberries, and gently toss.
